First beach day of the summer!

I've been away from this group for a few months, but will soon be back with a vengance! I teach yoga classes full-time in the winter, but I'm starting a two-and-half-month office contract on Monday. Daily bentos will resume!
Since last summer, I've revamped my diet. Still vegetarian, but more whole-foods based and bordering on vegan. I've tried to completely eliminate processed foods from my diet.
So, just a caution: my bento meals tend to be repetitive and boring. But at least I'm consistent! ;-)
Bento Challenge Week 1 Day 4
A vegan bento! Root vegetables, fried tofu (atsuage) and konnyaku stewed in a miso sauce (will post recipe soon), blanched spinach, a couple of snow peas for decoration. A tiny onigiri in the background that I ended up not eating. Total about 350 calories + the clementine (about 50 cal).
