1 Thomas' Light Whole Grain English Muffin, split
1 slice (1 ounce) lean, low-sodium ham or lean Canadian bacon
2 egg whites
1 slice low- or reduced-fat Cheddar cheese Salt and pepper to taste

Coat an egg ring (see note) with olive oil cooking spray.
Toast the muffin halves until they're lightly browned. While the muffin toasts, warm the ham for about 1 minute in a small nonstick skillet. Remove the ham from the skillet and place it on half of the toasted English muffin. Cover to keep warm.
Place the prepared egg ring in the nonstick skillet over medium heat. Pour the egg whites into the ring. Cover the pan and cook over medium heat for about 3 minutes, or until eggs are nearly set. Run a knife or spatula around the inside edge of the ring to break the egg loose. Remove the ring. Flip the egg over and cook it for about 30 seconds longer, or until done.
Place the egg on top of the ham. While the egg is piping hot, lay the cheese over it. Top with the remaining muffin half. Serve hot.

Note: If you don't have an egg ring, you can use the ring from a wide-mouthed canning jar, sprayed with olive oil cooking spray.

Makes 1 serving.

The low hit me at work this morning when I tested to see what my breakfast bolus had done. I didn't feel particularly low and the reading surprised me, coming out of nowhere as it did. I had a boatload of insulin from breakfast still driving me down further even as I realized I had no glucose tablets with me and wobbled over to the cafeteria to buy some regular Coke. The cashier seemed to be taking forever sorting cash in her register and throwing out receipts, and it was all I could do not to yell at her. But eventually I had my Coke bought and drained half of it in five seconds and could relax a bit. Then I went back and bought an enormous chocolate muffin and ate it to soak up all those extra units from breakfast I wouldn't be needing. And then I felt angry and annoyed for having to eat 500 calories just because of diabetes.

I don't like lows this low, and I like them even less when I barely feel them. They're scary. Especially when you have enough insulin in your system to make your blood sugar negative 2.5 if you don't do something in the next few minutes.

If there's one thing that's predictable about this disease, it's how unpredictable it can be. It can blindside you with an extremely low or high blood sugar out of nowhere, and you've got to be prepared.
