decided to make breakfast one day. these are spiced french toast with mushroom potato and chive frittata





POTATO MUSHROON AND CHIVE FRITTATA RECIPE:

- 1 large potato
- 1/2 pound mushrooms, sliced
- 1/2 an onion, diced.
- chives
- 1 cup of cheese of your choice
- 6 eggs, scrambled.

Sautee the potatoes in a hot pan with 2 tablespoons of olive oil. Add salt and pepper. Be sure to stir often to prevent burning. When the potatoes are golden brown on the outside, yet fork tender, remove them from the pan and set aside in a bowl.

Add 2 more tablespoons of olive oil to the pan and sautee the mushrooms and onions. DO NOT ADD SALT! salt will pull moisture out of the mushrooms and make them all watery. you want to brown them. sautee until the onions are translucent and the mushrooms are browned. Now, add the potatoes back into the frying pan. Chop up some chives and sprinkle it into the mix. Mix everything up.

Sprinkle half of the cheese ontop of the mixture. Pour the eggs into the frying pan and turn the heat way down low. cover pan until eggs are cooked. turn off the heat, sprinkle on the rest of the cheese, slice, and serve. Garnish with some chopped chives.

SPICED FRENCH TOAST RECIPE:

- 2 eggs
- 1 cup of milk
- 1 teaspoon cinammon
- 1/4 tsp cloves
- 1/4 tsp allspice
- 1/4 tsp nutmeg
- bread

Mix all the ingredients except the bread into a bowl. None of the spices are necessary in this recipe, but without them it becomes plain french toast, not spiced french toast :) dip the sliced bread (in this case a cinnamon swirl bread that i got at food4less) into the egg and milk mixture. Fry it in a frying pan with a tablespoon of butter until golden brown. Flip over until that side is golden brown. Serve with maple syrup and fresh berries.

1 1/2 cups frozen blackberries (** I used frozen blueberries **)
1 cup refrigerated mango slices (such as Del Monte)
1 cup (about 6 1/2 ounces) low-fat tofu (such as Silken soft)
1 cup orange juice
3 tablespoons honey

Combine all ingredients in a blender; process until smooth.

Yield: 4 servings (serving size: 1 cup)

These cheesecake swirled brownies barely lasted 5 min after they were cooled -- everyone enjoyed them thoroughly.

Here is the recipe:

Ingredients
Cheesecake batter:
* 1 (8-ounce) block 1/3-less-fat cream cheese
* 1/3 cup granulated sugar
* 1/4 teaspoon peppermint extract
* 1 large egg
* 1 large egg white
* 1 tablespoon all-purpose flour

Brownie batter:
* 4.5 ounces all-purpose flour (about 1 cup)
* 1/2 cup unsweetened cocoa
* 1/2 teaspoon salt
* 1 1/2 cups packed brown sugar
* 1/4 cup canola oil
* 1/4 cup buttermilk
* 2 teaspoons vanilla extract
* 2 large egg whites
* 1 large egg

Preparation
1. Preheat oven to 350°.
2. To prepare cheesecake batter, place cheese in a medium bowl; beat with a mixer at medium speed until smooth. Add granulated sugar and peppermint extract; beat well. Add 1 egg and 1 egg white; beat well. Add 1 tablespoon flour; beat mixture just until blended.
3. To prepare brownie batter, weigh or lightly spoon 4.5 ounces (about 1 cup) flour into a dry measuring cup; level with a knife. Combine 4.5 ounces flour, cocoa, and salt in a medium bowl, stirring with a whisk. Combine brown sugar, oil, buttermilk, vanilla, 2 egg whites, and 1 egg in a large bowl; beat with a mixer at medium-high speed until well blended. Add flour mixture to brown sugar mixture; beat at low speed just until blended.
4. Reserve 1/2 cup of brownie batter. Pour remaining batter into a 9-inch square baking pan coated with cooking spray. Carefully pour cheesecake batter over top; spread evenly to edges. Dot cheesecake batter with reserved brownie batter. Swirl top two layers of batters together using the tip of a knife. Bake at 350° for 26 minutes or until top is set. Cool completely in pan on a wire rack.

DESCRIPTION

Yogurt, lower-fat cream cheese and orange juice concentrate make this creamy dessert light and refreshing.

INGREDIENTS

1 Pillsbury® refrigerated pie crust (from 15-oz box), softened as directed on box
1 teaspoon sugar
12 oz (from two 8-oz packages) cream cheese with 1/3 less fat (Neufchatel), softened
2 containers (6 oz each) Yoplait® Original 99% Fat Free mandarin orange yogurt
1/4 cup powdered sugar
1 can (6 oz) frozen orange juice concentrate, thawed
1 box (4-serving size) cheesecake-flavor instant pudding and pie filling mix
1 container (8 oz) frozen reduced-fat whipped topping, thawed

DIRECTIONS

1.Heat oven to 450°F. Remove 1 pie crust from pouch; unroll crust on work surface. Sprinkle with sugar. With rolling pin, roll sugar into crust. Place crust in ungreased 9-inch glass pie plate. Fold edges under; flute. Prick bottom and sides generously with fork.

2.Bake 9 to 11 minutes or until lightly browned. Cool completely, about 20 minutes.

3.In large bowl, beat cream cheese, yogurt and powdered sugar with electric mixer on medium speed about 3 minutes or until light and fluffy. Add orange juice concentrate; beat until well blended. Sprinkle pie filling mix over top; mix well.

4.Reserve 1 cup of the whipped topping for garnish. Fold remaining whipped topping into cream cheese mixture until well blended.

5.Spread orange filling in cooled baked shell. Refrigerate at least 1 hour until filling is set. Garnish with reserved whipped topping and, if desired, orange peel.
