There are only four main ingredients in this vivid chartreuse soup: spinach, peas, potatoes, and onions-and then a long list of curry spices. The enticing fragrance loosed in the kitchen as the soup cooks is part of its appeal. So is the color. Feel free to play with the amounts of ginger, cayenne, and lemonjuice to shift the emphasis. Penny Goldin developed this soup as a tribute to Moosewood's Tibetan employees who grew up in India-exiled from Tibet-and whose childhood memories are stimulated by these aromatic Indian fragrances. With a soup this thick and spicy-sweet, you'll want something piquant and crisp, such as our Cucumber Peanut Salad (page 107).

2 teaspoons salt
4 cups diced potatoes
8 garlic cloves, peeled and left whole
1 tablespoon vegetable oil
4 cups chopped onions
11/2 tablespoons grated fresh ginger root
11/2 teaspoons turmeric
11/2 teaspoons ground cumin 11/2 teaspoons ground
coriander 1/2 teaspoon ground cinnamon 1/2 teaspoon ground
cardamom 1/a teaspoon cayenne, or to taste 1/4 teaspoon
ground black pepper 11/2 tablespoons fresh lemon juice 3
cups frozen green peas
(about 15 ounces)
4 cups packed fresh spinach, rinsed and large stems removed
1 3/4 cups reduced-fat coconut milk (14-ounce can)
fresh cilantro leaves, optional

Preparation time: 15 minutes Cooking time: 45 minutes

Bring the water and salt to a boil in a large soup pot. Ease in the potatoes and garlic, cover, reduce the heat, and simmer until the potatoes are tender, about 15 minutes. Meanwhile, in a large saucepan, warm the oil. Add the onions and saute on medium heat, stirring frequently, until translucent, about 10 minutes. Stir the ginger, turmeric, cumin, coriander, cinnamon, cardamom, cayenne, and black pepper into the sauteed onions. Add the lemon juice and 1 cup of the potato cooking liquid, cover, and simmer for about 5 minutes. Transfer the onion mixture to the pot of undrained cooked potatoes. Add the peas and spinach, cover, and cook for about 5 minutes, until the spinach is wilted. Stir in the in the coconut milk. In a blender, puree the soup in batches until smooth and creamy. Reheat gently. Serve with cilantro, if desired.

1 Thomas' Light Whole Grain English Muffin, split
1 slice (1 ounce) lean, low-sodium ham or lean Canadian bacon
2 egg whites
1 slice low- or reduced-fat Cheddar cheese Salt and pepper to taste

Coat an egg ring (see note) with olive oil cooking spray.
Toast the muffin halves until they're lightly browned. While the muffin toasts, warm the ham for about 1 minute in a small nonstick skillet. Remove the ham from the skillet and place it on half of the toasted English muffin. Cover to keep warm.
Place the prepared egg ring in the nonstick skillet over medium heat. Pour the egg whites into the ring. Cover the pan and cook over medium heat for about 3 minutes, or until eggs are nearly set. Run a knife or spatula around the inside edge of the ring to break the egg loose. Remove the ring. Flip the egg over and cook it for about 30 seconds longer, or until done.
Place the egg on top of the ham. While the egg is piping hot, lay the cheese over it. Top with the remaining muffin half. Serve hot.

Note: If you don't have an egg ring, you can use the ring from a wide-mouthed canning jar, sprayed with olive oil cooking spray.

Makes 1 serving.

2.5 mmol/l (45 mg/dl).

The low hit me at work this morning when I tested to see what my breakfast bolus had done. I didn't feel particularly low and the reading surprised me, coming out of nowhere as it did. I had a boatload of insulin from breakfast still driving me down further even as I realized I had no glucose tablets with me and wobbled over to the cafeteria to buy some regular Coke. The cashier seemed to be taking forever sorting cash in her register and throwing out receipts, and it was all I could do not to yell at her. But eventually I had my Coke bought and drained half of it in five seconds and could relax a bit. Then I went back and bought an enormous chocolate muffin and ate it to soak up all those extra units from breakfast I wouldn't be needing. And then I felt angry and annoyed for having to eat 500 calories just because of diabetes.

I don't like lows this low, and I like them even less when I barely feel them. They're scary. Especially when you have enough insulin in your system to make your blood sugar negative 2.5 if you don't do something in the next few minutes.

If there's one thing that's predictable about this disease, it's how unpredictable it can be. It can blindside you with an extremely low or high blood sugar out of nowhere, and you've got to be prepared.

These cheesecake swirled brownies barely lasted 5 min after they were cooled -- everyone enjoyed them thoroughly.

Here is the recipe:

Ingredients
Cheesecake batter:
* 1 (8-ounce) block 1/3-less-fat cream cheese
* 1/3 cup granulated sugar
* 1/4 teaspoon peppermint extract
* 1 large egg
* 1 large egg white
* 1 tablespoon all-purpose flour

Brownie batter:
* 4.5 ounces all-purpose flour (about 1 cup)
* 1/2 cup unsweetened cocoa
* 1/2 teaspoon salt
* 1 1/2 cups packed brown sugar
* 1/4 cup canola oil
* 1/4 cup buttermilk
* 2 teaspoons vanilla extract
* 2 large egg whites
* 1 large egg

Preparation
1. Preheat oven to 350°.
2. To prepare cheesecake batter, place cheese in a medium bowl; beat with a mixer at medium speed until smooth. Add granulated sugar and peppermint extract; beat well. Add 1 egg and 1 egg white; beat well. Add 1 tablespoon flour; beat mixture just until blended.
3. To prepare brownie batter, weigh or lightly spoon 4.5 ounces (about 1 cup) flour into a dry measuring cup; level with a knife. Combine 4.5 ounces flour, cocoa, and salt in a medium bowl, stirring with a whisk. Combine brown sugar, oil, buttermilk, vanilla, 2 egg whites, and 1 egg in a large bowl; beat with a mixer at medium-high speed until well blended. Add flour mixture to brown sugar mixture; beat at low speed just until blended.
4. Reserve 1/2 cup of brownie batter. Pour remaining batter into a 9-inch square baking pan coated with cooking spray. Carefully pour cheesecake batter over top; spread evenly to edges. Dot cheesecake batter with reserved brownie batter. Swirl top two layers of batters together using the tip of a knife. Bake at 350° for 26 minutes or until top is set. Cool completely in pan on a wire rack.

DESCRIPTION

Yogurt, lower-fat cream cheese and orange juice concentrate make this creamy dessert light and refreshing.

INGREDIENTS

1 Pillsbury® refrigerated pie crust (from 15-oz box), softened as directed on box
1 teaspoon sugar
12 oz (from two 8-oz packages) cream cheese with 1/3 less fat (Neufchatel), softened
2 containers (6 oz each) Yoplait® Original 99% Fat Free mandarin orange yogurt
1/4 cup powdered sugar
1 can (6 oz) frozen orange juice concentrate, thawed
1 box (4-serving size) cheesecake-flavor instant pudding and pie filling mix
1 container (8 oz) frozen reduced-fat whipped topping, thawed

DIRECTIONS

1.Heat oven to 450°F. Remove 1 pie crust from pouch; unroll crust on work surface. Sprinkle with sugar. With rolling pin, roll sugar into crust. Place crust in ungreased 9-inch glass pie plate. Fold edges under; flute. Prick bottom and sides generously with fork.

2.Bake 9 to 11 minutes or until lightly browned. Cool completely, about 20 minutes.

3.In large bowl, beat cream cheese, yogurt and powdered sugar with electric mixer on medium speed about 3 minutes or until light and fluffy. Add orange juice concentrate; beat until well blended. Sprinkle pie filling mix over top; mix well.

4.Reserve 1 cup of the whipped topping for garnish. Fold remaining whipped topping into cream cheese mixture until well blended.

5.Spread orange filling in cooled baked shell. Refrigerate at least 1 hour until filling is set. Garnish with reserved whipped topping and, if desired, orange peel.

It was my friend Ryan's birthday. He's 26 now. Still a young pup. With every year that passes, I grow one year older, yet I never age. Mentally that is. ;o)

It was a great night. Good football games (even though I was 1-1 for the day). Great food. Great friends. I ate so much too. I must have gone over my daily caloric intake by about 1,200 calories at the very least. But, I bust my ass working out so every once in a while I can get away with such things.

On another note, I can't believe I let myself get behind on my pictures again. Just two more days to catch up on. Hopefully they'll be up today.
